this is so fresh and the flavours work amazingly together until what you've got is a creamy risotto with crunchy lemon and black pepper broccoli, sweet peas and some zesty lemon and mint to top it all off. if you know how to make a basic risotto - this is so simple.
// ingredients //
one onion
two cloves of garlic
a glass of white wine
two cups of arborio rice
one cup of peas
one cup of broccoli
500 ml chicken stock
one cup of mint
feta
lemon
plack pepper
salt
chop up your onions and garlic and fry them up in some olive oil. once golden add the arborio rice and lightly brown it. at this point add the vino and make sure it bubbles to get all the flavours going. turn the heat down and let it simmer. don't stop stirring. when the mixture starts to get creamy add more stock and continue to do this until all the stock is finished and the rice is soft. in the mean time, blanche the broccoli in some boiled water and season with lemon, black pepper and olive oil. add the peas and broccoli to the mixture along with a generous amount of crumbled feta and chopped mint. top this off with parmesan, a squeeze of lemon juice and black pepper.
