these chilli poppers are the best i've ever tasted. and i think the thing that made them so damn good was finding fresh, big, green chillies that are ideal for stuffing. i used kellogs cornflakes bread crumbs which made them amazingly crunchy.

cream cheese
cheddar cheese
green large chillies (ideally fresh)
milk
flour
kellogs cornflakes bread crumbs
oil for frying

mayonaise

its quite a process but a glass of vino and some music and you're sorted. slice the chillies down the centre and scoop out the seeds. in a bowl mix about two tablespoons of cream cheese and a handful of grated cheddar. then stuff this mixture into the chillies. don't worry if they're bursting. the more cheese the better :) now put these guys in the fridge for about ten minutes. then you dip them in milk and toss them in flour and put them in the fridge for another ten minutes. more vino. lastly dip the chillies into milk again and then into the breadcrumbs. make sure that they are covered in a thick coating and place them in the fridge for a final ten minutes while you heat your oil. check that the oil is super hot (like when you fry potatoes) and get your poppers in there. about 5 minutes and they're golden and crunchy on the outside, amazingly cheesy on the inside. for the horseradish dip you mix about a tablespoon of horseradish, a tablespoon of mayonaise and a good squeeze of lemon juice and black pepper. such a delicious combination.
