egg special italian style





my mom and dad always used to tell me about this amazing breakfast place that they used to frequent with a hangover on a sunday at university. this little bistro served an "egg special" and a coke for some ridiculously cheap price on a sunday to curb boozy breaths and headaches. the original was slices of tomato, cheddar cheese and butter on toast topped with a fried egg, which i ate religiously as a kid. 

here's my egg special with a twist

grill some smokey bacon with some diced onion and garlic sprinkled over the top. toast a couple of pieces of wholewheat bread drizzled with olive oil and thyme. chop 2 tomatoes and an onion, garlic and chili and fry it all up with olive oil in a pan until its quite saucy. cook your egg the way you like it best - fried, poached, boiled would all be amazing. and then to stack it up you pile on some crispy bacon, spoon over mixtures of the delicious tomato relish, tear up a few green olives over this and then your eggs - a dash of worchester sauce, tobasco, basil or coriander and its got to be a beautiful morning.
