i'm always so disappointed with the nachos you get in restaurants. they can be so stingy with the gauc and that's the best part. these nachos are so delicious and so easy. you can use any mexican style tortilla chips - even doritos are great. grate some white cheddar over the nacho chips in an oven tray and grill until the cheese is melted. for the gaucamole you need a couple of avos, lemon juice, salt, black pepper and a tablespoon of sour cream all mixed together. for the salsa chop half a red onion, two tomatoes, coriander, chilli, and mix together with a squeeze of lemon juice and a drizzle of olive oil.
to put together, spoon the salsa on to the cheesy nachos. then the fresh gaucamole lathered on top of that and finally a dollop of sour cream and freshly chopped coriander.
