mustard and almond roasted pork chops with pear, butternut and zucchini


my favourite way to eat pork chops. place them in an oven roasting dish. make sure you rub salt into the crackling so that it goes nice and crispy. lather with wholegrain mustard. dice up some butternut, zucchini, onion, garlic, ginger and one pear. add some chili if you want some heat and finally drizzle with olive oil and a few dashes of soya sauce. roughly chop a handful of almonds and sprinkle over the top. bake in the oven at about 200 degrees celcius until the pork is crispy and golden and the veggies are soft. the sweetness of the pears, salty pork, tangy mustard and crunchy almonds go together beautifully. i love a little ginger bomb every now and then too. just to keep it fresh. x
