for the peppers
halve the red peppers. drizzle with olive oil and garlic and fill with a few slices of buffalo mozzarella and two or three oyster mushrooms on top. grill until golden and the cheese has melted.
for the chickpea patties
blend one carrot, one onion, garlic, chilli, ginger, a handful of coriander, lemon juice, olive oil, one can of chickpeas, two tablespoons of flour, one egg and two tablespoons of olive oil. salt and pepper to taste. roll the mixture into balls and press into patties. shallow fry them for about 10 minutes in olive oil. until golden brown.
for the salad
grill half a butternut in the oven with olive oil, salt and pepper until golden and soft. (leave the pips in they go crispy and taste delicious in the salad) then you halve the cherry tomatoes and toss them together with the butternut, olives and coriander. drizzle this generously with a dressing made from olive oil, lemon, salt, sugar, pepper and a teaspoon of wholegrain mustard.
